Amylase: group of enzymes that degrade polysaccharide molecules formed by starch and glycogen. They are distinguished into alpha-amylase and beta-amylase.

Protease: also called peptidase, these enzymes are involved in protein digestion.

Lipase: enzymes involved in the hydrolysis of triglycerides into glycerol and fatty acids. Taken with meals or just before a meal, lipases favour the reduction of adipose and cholesterol deposits.

Cellulase: family of enzymes, mainly produced by fungi, bacteria and protozoa that catalyse the hydrolysis of 1,4-beta-D-glycosidic bonds in cellulose, and of beta-D-glucans in cereal.

However, there are also forms of cellulase in animal and plant organisms, and they often differ in terms of structure and mechanism of action. Five classes are distinguished based on the type of reaction catalysed, and their sequential action leads to the degradation of plant fibres into simple glucose subunits.

Lactase: also called beta-galactosidase and secreted by mucous tissue in the small intestine, it triggers hydrolysis of lactose into the two monosaccharides that form it, namely galactose and glucose. It is particularly active at birth, but suffers a clear functional decline soon after weaning. This phenomenon causes the so-called lactose intolerance: when there is poor lactase activity, which is common in adults in various degrees, ingestion of this sugar triggers a series of symptoms, such as bloating, abdominal cramps, meteorism, flatulence, diarrhoea, tiredness and weight loss.
